I want to prepare something quick for lunch the next day, as usual, during the evening and in a hurry.
A take away lunch must has, in my opinion, some specials features: easy to carry, not too heavy to digest and good (this is valid for all meals)
Trying to have a healthy diet (as much as possible), I wanted something that  included vegetables.

So I opened the fridge and found a sad leek that it is a while that it is expecting to be cooked, radicchio, a Chinese cabbage, tomatoes, lettuce, carrots, … Yesterday I bought a roll of puff pastry. Perfect!

N.B.: if you want, you can have half the quiche for dinner accompanied with a salad of tomatoes and you can take the other half for lunch, with maybe a fruit salad.

Chinese Cabbage Quiche

Quiche with Chinese cabbage x 2

    * 1 roll of puff pastry
    * 1 leek
    * 5-6 leaves of Chinese cabbage
    * 1 egg
    * 150g light philadelphia
    * 1 cup yogurt
    * 2 tsp pine nuts
    * 2 anchovies
    * Oil
    * Salt
    * Sesame seeds

Preheat the oven to 250°.

Slice the leek and the cabbage.

Cook the leeks in a pan with olive oil and anchovies for 5min and then add the cabbage. Cook at low heat with a cup of water, cover the pan with a lid until the vegetables are soft (about 5min). Raise the heat to dry the excess water and add the pine nuts and salt to taste.

In a bowl beat the egg with cheese, yogurt and two pinches of salt.

Roll out the dough into a round tart pan with baking paper. The dough should reach the lateral border. Trim the excess dough and set aside.

Add the stewed vegetables to the mixture, stir the ingredients well and pour it in the middle of the pastry. Spread the mixture evenly. Folding the side flaps towards the inside and lay the pieces of puff pastry over the mixture. Sprinkle with sesame seeds and bake blacks.

Leave the tart in the lower part of the oven for 5 min ( otherwise the mixture tends to soften the base). Then turn the heat to 180° and lift the cake in the middle of the oven. Bake it for about 10min-15 untill the pastry is puffy and golden.

Chinese Cabbage Quiche

A good glass of red wine, maybe a Rosso di Montalcino. Oh no! I forgot that this is for lunch at work, then a good cup of water! Enjoy it!
